So...If r2-Astro droid carries him past enemies, does yoda get to attack each enemy he adjacently passes as he is being carried? Then, he can "gallop" back again on his own turn to attack again?

No. Tow cable does not work with Galloping or strafe attack

Around the time of the Clone Wars set, both Strafe and Galloping Attack received errata to only work on the characters own turn.
