If a character with flight moves adjacent to, or ends its movement adjacent to a character with mines special ability, do they make a save roll?

The space a character occupies is not adjacent. So no.

For instance a Lancer (which is large) will have to make lots of mines saves if it flies over a character with mines. It would make a save when it first moved adjacent. Then when it move the next square, it would have to make another save as the "back" would be adjacent. I think it is a minimum of 3 mines saves (maximum of 5) for a lancer to fly over a med size character with mines.

Assuming that E is the enemy character with mines, you could do it in as little as 3 with HI being the first square you fly over, then EF, then FI.
