After crunching some numbers I think it would be best to just keep your Win/Loss record for each tournament. You get 1 point for every win. So making it out of Swiss helps only in giving that individual more chances to win and get more points.
Tie Breakers would be: 1. Most tournaments won 2. Most times out of Swiss 3. Head to Head record throughout the season 4. Most tournaments entered 5. Least points opponents scored against you.
I propose that the tournament last until December (5 tournaments) and then we have a top 8.
We have a straight tournament from there Game 1: #1 vs #8 Game 2: #2 vs #7 Game 3: #3 vs #6 Game 4: #4 vs #5
Semis: Game 5: Winner of Game 1 vs. Winner of Game 4 Game 6: Winner of Game 2 vs. Winner of Game 3
Consolation: Loser of Game 5 vs. Loser of Game 6
Finals: Winner of Game 5 vs. Winner of Game 6
The top seeded player automatically wins the map roll for Home Court advantage.

So, I updated the top post. Any thoughts let me know. I am sure I can learn how to host a tournament by the time it comes around. I guess the "tournament" after the league can happen whenever everyone involved (top 8) is available. So we can schedule that at a later date. Even if it takes a while.
