What exactly does a trench do? I can't find the definition anywhere.

In the game? I don't believe there are rules for trenches in SWM, what is referencing a trench?

Normally that would be treated like a wall which is why the "trench" description tells you to treat it like difficult terrain instead. My guess is that there are either some scenario rules that apply to the trench being treated like a wall or else it was a mistake.

I believe the Trench rules for the scenario was that the character's gained cover, but got a +6 Def bonus instead of +4, only when you were in the Trench.

The cover was when targeted by others not in the trench. There is no cover for trench-to-trench shots.
And I think there was a movement penalty when jumping in or climbing out.
