So...she has MOTF2. Can I lightsaber block a melee attack and then spend another force point to try and riposte the attacker? I wasn't sure if since I blocked the first attack, riposte would not be allowed to take place because riposte needs the attack to hit in order to attack them.

Both trigger on the hit so you can use both. Just because you blocked that doesn't mean the attack no longer hit, just that all of the damage was prevented.
