Here's one without Atris: Jacen Solo, Jedi (10 HP) + Luke Skywalker, Master of the Order + Nei Rin + Vergere + Cover (19+8+2+4+4=37) 191 points
It can be much cheaper if you were to remove Luke and replace him with the Chief of State Mon Mothma trick I did for the Rebel Luke Skywalker squad a few posts above. I think that would leave him at, what, 55 Defense? (Assuming that there aren't any Reserves pieces in the squad, of course.)
EDIT: I don't know how anyone can beat Echo's build. The only piece that might be able to compete, Khem Val, can only get up to 16 Defense before factoring in Absorb Life Energy...

Lowering the opponent's attack does not count as increasing your defense.
One thing I don't think I made clear - the defense needs to be calculated for a particular attack. So if you want cover the enemy needs to have a shooter still alive. In order to maximize things with mon mothma or Leviathan, you need to show how many you can kill in one round before ending the game by scoring 200 points. "Infinite" won't fit on the board so they can't all be killed in the same round. If they're killed in different rounds the game will end.

Each round, Salacious bases a Drone, and the Leviathan eats it. After he eats everybody he is at 117 Defense in cover.

Leviathan may end up being the winner. You need to leave Poggle alive to be the shooter, so 116 in cover. More details are needed if you want credit for the reserves version. The game is already very close to ending before any reserves.

Random thoughts that may or may not help.
You can get pretty much any character into any faction with Kreia/Betrayal. But their faction doesn't change when they switch.
Yammosk can steal Mon Mothma's ce.

I see how it is; I break your game, so you make a bunch of new rules. Anyway, this is further optimized: Opposition squad: Poggle the Lesser Rakghoul Geonosian Drone x87 My squad: Leviathan Salacious Crumb Ewok x45 Enemy Rakghoul kills an Ewok, turns it into a Rakghoul. Those Rakghouls keep killing Ewoks, making more Rakghouls, until all Ewoks are Rakghouls. Leviathan first eats the Rakghouls which aren't worth points so it won't trigger the game ending, then eats the drones (with Salacious adjacent so they don't blow up on him). The Rakghoul that is worth points then kills Salacious, and the Leviathan eats him and the Rakghoul worth points, leaving just Poggle. Leviathan has eaten 134 things, plus cover and base 17 Defense gets him to 155 Defense.

You can actually do better than what is above, but it builds on Echo's idea.
