How exactly does Stealth work/interract?

Stealth (If this character has cover, she does not count as the nearest enemy for an attacker farther than 6 squares when choosing targets)

If a character with Stealth is only character that is in my LoS, but I am not within 6 squares, am I able to target it, or not?

Glossary text:

If this character has cover, it does not count as the nearest enemy for choosing targets if the attacker is more than 6 squares away.

A character can attack an enemy with cover only if that enemy is the nearest.

If this character would be the nearest enemy, the next-nearest enemy counts as the nearest instead.

Follow the normal rules for cover if the character with Stealth is within 6 squares of the attacker.

The way we play it normally is that if a character has stealth and is outside of 6 squares then it cannot be targetted. But reading both the card text and the glossary text it almost reads like characters with stealth can be targetted if they're the only character in line of site?

nearest enemy text:
The nearest enemy to a character is the nearest enemy it can see. Another enemy who is actually closer but out of line of sight does not count as the nearest.

line of site text:
A character can see a target that it has line of sight to. Walls block line of sight. To determine line of sight, draw an imaginary line between any point in one character’s space and any point in the other character’s space. If any such line is not blocked by a wall, then the two characters have line of sight to each other. The line is clear if it doesn’t intersect or even touch walls.

target text:
An enemy character chosen for an attack, special ability, or Force power. Line of sight and cover are determined by drawing lines to the target’s space. A square itself can’t be a target.

Assuming the character with Stealth that is more than 6 squares away has cover, you can't target it, even if it is the only enemy in line of sight.

I agree with you, but where can we find this in the glossary to confirm?

You've already quoted the relevant part of the glossary above, which is this:

Quote:
If this character has cover, it does not count as the nearest enemy for choosing targets if the attacker is more than 6 squares away. A character can attack an enemy with cover only if that enemy is the nearest.

You can only attack an enemy with cover if it is the nearest. An enemy with Stealth and cover farther than six squares away does not count as the nearest.

This is also covered in Nickname's 2010 official FAQ:

Quote:
Q: I'm totally lost on the Stealth ability and why you would use it. Can you please explain how it's used?
A: Normally, if a character has cover, it cannot be attacked unless it is the nearest enemy. However, a character with Stealth that is more than 6 squares away is never considered to be the "nearest enemy." In other words, even if it is the only character in line of sight, you wouldn't be able to attack it if it has cover and is more than 6 squares away.

Nickname also made a visual guide to Stealth in 2006, which addresses this rule first:
