There are definitely times that I would not want to lose a character just for the extra attack. Would I have to?

But for CEs granting abilities such as Extra Attack and Ambush that are optional; its still technically a manditory CE so it would be as if the character has Ambush on its stat card but can choose not to use it...but is still considered having Ambush regardless if the character chooses to take advantage of it (sorry to make that sound confusing).
