I've never been in this situation before so I don't know for sure but I assume that 2 characters w/ Djem So could keep going back and forth attacking each other if they both keep making their Djem So saves, correct?

Or until someone declines the attack. The Resolving Effects section of the FAQ shows how this is resolved.

Yeah make sure to grab a pen and paper too haha.
I've had it happen and depending on doubles and twins... it gets interesting and confusing real fast.

Usually the worst part is worrying about whether you can actually make the save each and every time. You may get lucky and, as already stated, grab a pen and paper to keep track so you know when the actual Djem Sos end and the next regular attack occurs.

I ran into this problem tonight. Czulkang vs. Czulkang. We had a mirror match, epic duo going. Both Tsavong's were defeated, and both Czulkangs were going head to head with double twins and counterstrikes. We both were defeated, but as per Djem So kept resolving effects. If we didn't agree to quit, we could have gone all night! When does it end?
Also, do you resolve each attack separately, or each set of twins? It got SO confusing after a while, that we called it a draw, and quit the game. Pad & pen?!? You need a specialized program to keep track of this sh*t!
Seriously, how do you resolve this?

Have you read the Resolving Effects section of the FAQ?
Pretty much, Djem So/Counterstrike happens at step 10, with Damage/Defeat at step 12, with you making the Twin at step 16.
It's like those math problems that involve the (). You have to do what is in the parenthesis first. Djem So/Counterstrike keeps adding new () equations that have to be resolved first before you can finish the original attack. Once the first attack misses or is declined, you start working your way back up, resolving the outstanding attacks (which with Twin, can begin the process all over again). Once a character takes enough damage to be defeated, all remaining Twins/Djem So's are lost (though you still apply all outstanding Damage from hits).
