How many DIFFERENT maps make up those 40-60?
I'd keep no more than 2 copies of any single map (1 to use, 1 as a reserve in case of damage/loss). Sell or give away the rest.
I have 1 copy of each map from the first 3 starter sets, the Clone Wars starter set map, the Endor set maps, the 3 Ultimate Missions maps, 2 AT-AT maps, 3 Battle of Hoth maps and 1 promo map (whichever temple it is). The Hoth maps are stored with an AT-AT (in the box), while the rest are folded up in my RotS starter box.
My guess is that he has 20-30 sheets, since most maps are double sided.
You can't log ownership of maps on this site, but that functionality is near the top of the wishlist for many people.
Dantooine Base's map guide shows 29 WotC maps - I'm not sure if that's complete. Two of those maps were only available through the "League Kit". I don't know how the league kits were distributed, but I never got one. A couple of the maps listed are single sided, but that's about 17 sheets or so for the whole set. More sheets if you count re-prints.

Dantooine Base doesn't have MapMaker's 2 latest maps listed there. For JediCartographer, he starts with Map Pack #3. So he doesn't list 5 maps in Map Pack #1 (Theed Palace map was recently re-printed and he has that one), and he doesn't list the 8 maps in Map Pack #2. Also, he hasn't listed the exclusive Sith Temple map. That brings it to a total of 46 JC and MM maps. So about 24 more sheets.
These maps are unofficial in the sense that they weren't released by WotC, but the maps have an official rating for tournament purposes (some are even on the Restricted list for the championships), and in large part they are better for gameplay than many of the WotC maps. Many of the WotC maps are wide open and give shooters a huge advantage over melee. Also, MapMaker is the same artist who made many of the WotC maps (maybe all of them?).
