The SA states the damage from her attacks cannot be prevented. But also that it counts as a lightsaber.
My question is dispite the fact I will still take damage from the attacks can I choose to Lightsaber Block her attacks for an attempt at Cortosis Guantlets?

No. Because the damage cannot be prevented, you cannot use abilities to prevent the damage. So you can't use Block, thus are unable to trigger Cortosis Gauntlet.

1. It is still a Melee Attack, and Djem So is not preventing damage.
2. You can't prevent the damage, but ignoring styles would still work.
3. Duelist isn't preventing damage.
