Location: SWMing now in the 936
So if a character currently has Force Ascetic as a Special Disability. Would Mettle granted by a Force Sprirt override the bestowed character's ability to reroll saves etc...?

No. Mettle says nothing about negating restrictions against rerolling. It's useless in that case since FP rerolls are prohibited.
