Ok, say I'm move my Darth Maul, Champion of the Sith next to Darth Bane as my last move of the round, and then win Initiative (sorry, no Sith Sorcery for you!). DB ha 80 HP left, so I don't bother using Sith Rage. If I miss the first attack, I obviously could reroll it, but would it be legal to use Sith Rage AFTER the turn has begun, and I've already made some attacks?

Yes, you can use Sith Rage any time you're attacking ( including AOOs).
