Ok, from my understanding, a character can not get any bonuses on a Attack of opportunity (unless the ability says so like quick reactions.) Does twin attack apply to attacks of opportunity since it triggers whenever the character attacks? Second question: If a character with a force spirit attached to it roles a 1 against a character with Betrayal and joins the other team, does the Force Spirit change sides? Is it defeated?

The first answer is that it does make the twin attack. Twin attack triggers whenever the character attacks (clearly not triggering on itself or you would get infinite attacks). Certain bonuses do actually apply on AoO's. It just depends. For example, a character with opportunist would trigger their +4 attack +10 damage when making an AoO against the activated character. It just depends on the ability. Usually the FAQ or Glossary helps to clarify if an ability only works on the characters turn. The second, is I believe the spirit is defeated. But i'll let someone more knowledgeable confirm that.

And AoO is just like anyother attack, any bonuses that apply to an attack would apply to an AoO, depending on the conditions of the bonus.
When a character a Force Spirit character is attached switches sides, the Force Spirit character is not defeated. All the bonuse of Force Spirit would still apply if within range.
