Wook entry on Tso'asu: "A tso'asu is a Yuuzhan Vong creature that crawled." Only source is one MENTION from Edge of Victory I: Conquest. How on earth do you make a mini of that?

You mean a custom? Good luck. As far as stats - seems like it should be pretty easy. You can make up pretty much whatever you want.

The worst case scenario is that there could be more about them in a novel sometime, and it could end up weird if the Tso'asu turns out to be 20 metres tall or invisible.

The Tso'asu serve a very needed purpose for the Vong. It fills a niche, and adds TWO new SAs that I hope we will see again elsewhere.
Very minor spoilers: Cost 5, Speed 4 (they crawled), force immunity, 10 hp, 13 defense, 0 attack, 0 damage, 1 known SA, and 2 new SAs

I think you've gone a bit farther than you needed to there. In particular, Thrawn and Mara will not be going anywhere. (Although Mara might come back to life.) The Zahn trilogy is too popular and well-established and is early enough that the new movies won't step on its toes. That honestly be the only thing makes the cut, though. Anything else... who knows?
