This has probably been asked/answered already, but I would like to know;
If an adjacent character (Melee or Non-Melee) is attacking, does that character "target" the enemy? The Scenario would be for a character that can switch positions when targeted.

I'll give a third answer. Attacks target unless it says they don't. Lightsaber Sweep and Attacks of Opportunity specifically day they don't target.
Pretty much everything targets unless it specifically days it doesn't. (Whether on the card, glossary, or FAQ)
Another one that targets that you might not expect is Face Your Destiny. It ignores two big targeting rules (line of sight and cover), but you can't choose another enemy if one is adjacent. And you can't use FYD if Diplomat applies.

@ Shaun- rule o' thumb, if the ability uses the word target in it's description, then Targeting Rules apply.
