I see many, many lists filled out with these. My question is, are they used more for extra activations or their special abilities? Trying to decide whether or not to buy some.

Every squad needs door control. Generally 3 Ugnaughts and one override is a good rule of thumb, but you can need more, especially if you see a lot of gallop and strafe.
Some squads need relay orders, and some don't, but 3 point Mouse Droids with 20 defense are very useful anyway. They're 2 points with Gha Nachkt, if you're not playing the change to the floor rules.

Thanks, that helps. Is gallop and strafe run and shoot as Mobile Attack?

Galloping Attack and Strafe are special abilities -the most popular pieces with these abilities include Yoda on Kybuck and the IG-Lancer Droid. Both of those are featured in the top tier squads that FlyingArrow posted yesterday.
Even if you're playing without those pieces, the ability to control doors can help you to get your melee pieces in close without being shot, or to give you a round or two of free attacks without taking damage back. It's very important to the game.
Some casual players don't like to use door control, but it's such an important part of the game that you should just learn how to use it from the start.
