When it says "only once on a turn" I assume this also applies to using Lightsaber Defense or something similar only once in order to be able to use The Father's Force Point for that Defense, right? Since it says "a turn"?

Correct. An ally can use The Father's Force points on any turn (i.e. their own turn or Lightsaber Defense when they are attacked), but by doing so they forfeit the right to use Master of the Force 2 or any other ability that lets them spend Force points a second time that turn.
