Glossary text says:
(Force; 2 Force points): Instead of making its normal attack or attacks, a character using this Force power deals 20 points of damage to an enemy within line of sight. This follows all the usual rules for choosing a target. Using Sith Grip is not an attack and does not require an attack roll.
Character A has Sith Grip and is 2+ squares away from Character B.
Character B has Cloaked and is in Cover.
Can Character A use Sith Grip on Character B?

Character A has Sith Grip and is 7+ squares away from Character B.
Character B has Stealth and is in Cover.
Can Character A use Sith Grip on Character B?
additionally...
Character A has Sith Grip and is 2+ squares away from Character B.
Character B has Stealth and is in Cover, and has Moff Nyna Calixte in the squad granting them "Super Stealth".
Can Character A use Sith Grip on Character B?

Oh yeah, replace Sith Grip with Grand Master Yoda's lightsaber throw... would his lightsaber throw work in all those cases?

In all three senarios, you would not be able to use Sith Grip on Character B. When someone is Cloaked or under the effects of Super Stealth and benefitting from Cover, you must be adjacent to them in order to target them. As for normal Stealth, you must be within 6 of them AND they must be the closest figure.
As for GMY's LST 3, the Force Power specifically says that you can target anyone ignoring Cover. This does NOT mean they loose the Defense bonus given by Cover, it just means that you can basically target anyone within LOS (with some exceptions like Diplomat).

As for LST3 and LST5 I took it to mean when it says ignoring cover that the do not get cover or the benefits of it.

A lot of people were under the same impression when Lightsaber Throw 5 came out in The Force Unleashed. But the FAQ covering LST 5 on the WOTC Forums stated that the characters being attacked still get the Defense bonus for Cover. It's just for purposes of choosing targets that you get to ignore Cover; making it possible for GMY and Vader, UL to target people that are Cloaked, Stealthed, or Super Stealthed.

Oh thanks, I think I was playing once you are within 6 of someone you can target them or anyone else within 6, unless they are cloaked or SStealth.
