Mercenary Glossary Text: This character can move only if it has no legal targets to attack from the space where it starts its move. (However, if it first defeats an enemy with a single attack and cannot then attack any others, it is free to move afterward.) If it moves into a position where it can attack, it does not have to end its movement there.
And, I know that I've seen a post here answered that if a the character with Mercenary also has Intuition, they can move using Intuition even though they could make an attack during their turn.
Does this mean that if the character with Mercenary does not have any ability to make more than one attack, and they defeat a legal target, they could then move even if there would be other legal targets if they had an ability to make additional attacks?

If your mercenary with only 1 attack defeats an enemy with it, then it cannot attack any other legal target, and is free to move. It's not just about legal targets, it's about not being able to attack too.
