Can you evade LS throw 2, and do you get cover bonus with it?? As it is treated as ranged...?

yes you can evade as long as the attacker is nonadjacent, yes you still get cover from the attack (again, not if they're adjacent) and yes it counts as ranged because it states in the glossary definition "This counts as a nonmelee attack for the purpose of effects such as Lightsaber Deflect and Molecular Shielding."
