I don't mind Mushroom planet. The right side has 3 different approaches while the left has 2. The "action" can become a little stale when you are fighting against the same squad archetype several times in one event, but can have some unique flavor if you are creative.
I like Cantina too, but I think that many of the arguments against Mushroom Planet can be applied to it as well. Limited approaches and the action mainly taking place in the same areas. I still think it is a good map though.
Taris Lower City is a map that I have played a number of games on. I would be curious to see what it is like in the current game state.
Anchorhead was a map that was legal for a long time. It has a safe approach on both sides but the action is always in the same room.
I think that Korriban (2008) 049 is simialr to ravaged base with fewer "Safe Spaces" to hide in.
Peaceful City would be an interesting one to bring back
Sith Temple (2011) 085 is worth looking at maybe
I like Royal Militia HQ (2018) 148 but I know it hasn't been gone long
