Can Rolling Evade, Evade, and Soresu Style be used along with Defender, to give a character 2 chances for save rolls to avoid damage from non-adjacent attacks?

Yes.
Defender gives a roll to the character with Defender, rather than the target. So it isn't technically doubling up.

Is the defender save optional? thinking of the new force nexus and lets say youd rather just take the damage to save some force points on the nexus. Is presence of the light side optional or a must as well?
