I was thinking of dropping one of the speeders for either a Dash RS or an E. Handmaiden as people to target EO66 Palpy. What do you think? Is there a different piece that i should use over the above two?

Comments left, though I didn't consider having to face Palpy SL at the time. If you think you will face him, you might consider something like an HK-50, Jariah Syn etc for higher attack and damage values. The Echani and Dash have a lot of shots, but if you are missing it won't help against the Sith Lord.
