So... just to clarify - Melee Reach 2 (or 14... whatever) means that EVERYTHING involving adjacent thingees (Mines, AOO's, attacks, etc.) now count for 2 squares away for both attacker and defender - right?

All figures are adjacent for purposes ONLY on the character with Melee Reach X's turn and while they are attacking.
It is tough for a lot of those things you listed to happen during an attack on that character's turn.

So, to get this straight, cos' I'm not reading it right and I may need to argue it... attacks - yes (that's a no-brainer really as that is what it is for), Mines - no? AOO - no? (Y'know moves through a square that would be two squares away... because that has nothing to do with his attack?)

Glossary Text:
When making an attack on its own turn, this character treats all characters within 2 squares as adjacent for all purposes. This character can be affected by enemy special abilities or Force powers that specify adjacent characters and interrupt this attack, such as Self-Destruct.
this sums it up.
