1. Lets say i have general skywalker who has Djem So Style, can he use Djem So Style and use force defense?

2. A melee attack is considered a melee attack if and only if the character that is attacking has melee attack (even if hes adjacent to the target)?

3. Lets say i have general skywalker, yoda on kybuck, and mas ameda. General skywalker's effect only affects yoda when he ends his turn to attack a target?

1) Yes, as Lightsaber defense only negates the damage, it does not change the fact that he was hit by an attack.

2) Yes, or if the character under the effects of a special ability/force power that makes their attacks melee (i.e. Poisoned Blade).

3) Yoda on Kybuk would not gain Momentum until he has finished his movement (either by moving the full possible distance or the player declaring that they are done moving).
