This was probably covered along time ago, but does she get to shot every legal target twice, or just once?

Twin attack applies to all attacks, so it works with Blaster Barrage.

that's why arica's used in so many imp swap squads! (usually with vader...Glare )

If you really want to have fun with Arica, you can give her Accurate Shot via Xizor from Universe. This will allow you to shoot every target you can see (with the exception of characters that are super stealthed, cloaked, diplomats, etc).
