Sooo... this came up at our local Tourney and I thought I had the right understanding, others insisted it was wrong, and the rules book couldn't illucidate at the time.

Jarael hangs out... Yobuck gallops past... she makes the attack of opportunity hitting him... he fails the shockstaff roll... does he stop his gallop? They argued that he has already activated so shockstaff wouldn't stop him... the Rulebook says he is stunned so I read that as he can't move from there...

illucidation please.

Q: What happens if a character counts as activated in the middle of a move, perhaps from failing a Paralysis save on an attack of opportunity? Does it stop moving immediately?

A: No. The character will typically already count as activated barring this occurring on something like Surprise Move but if that's the case, it then counts as activated. There is no effect on the move/turn in progress. The character may continue on as normal. Only the activation state (potentially) changes.

From the Holocron FAQ's under activating. Couldn't find Shockstaff.

Your players were correct. Shockstaff, Paralysis or any other effect that activates a character do not work on a character who is currently activated. The only AoO attack that would stop a Gallop would be Zuckuss' Snare Rifle ability.

Lol, I knew I was forgetting one. I almost put "if I remember correctly" in my first post but was afraid the intent would be misconstrued to mean the ruling.
