Can a character use riposte when defeated? Ex: Bane uses Sith Rage and crits an 80 HP Master Windu to defeat him. Can Master Windu riposte that last attack (assuming he has FP) even though he's defeated?

Yes, as Riposte occurs at an earlier step than the application of damage. This is explicitly covered under Lightsaber Riposte in the FAQ.
