From the 6 movies, we had the following lightsaber duels and outcomes...

Ep 1
Maul vs Qui Gon = draw
Maul beats Qui Gon
Obi-Wan beats Maul

Ep 2
Dooku beats Obi-Wan
Dooku beats Anakin
Dooku vs Yoda = draw

Ep 3
Dooku beats Obi-Wan
Anakin beats Dooku
Anakin vs Grievous = draw
Obi-Wan vs Grievous = draw
Obi-Wan beats Grievous
Palpatine beat Fisto, Tiin, Kolar
Mace beats Palpatine
Anakin beats Mace
Anakin beats Cin Drallig
Obi-Wan beats Anakin
Palpatine beats Yoda

Ep 4
Obi-Wan vs Anakin = draw

Ep 5
Anakin beats Luke

Ep 6
Luke beats Anakin

No clear winner. Dooku clearly beat Obi-Wan, who clearly beat Anakin, who clearly beat Dooku (the 2nd time). And Anakin beat Mace, who beat Palpatine, who beat Yoda.

Referring to Anakin's traitorous interjection into the Mace/Sidious duel as a duel itself is dubious.

Perhaps, but there were lightsabers, Mace didn't sense it, and Anakin won. I considered counting Vader's similar defeat of Palpatine, but no lightsabers there.

Counting 2-on-1 duels and duels where one party runs off was also tricky. I went with the following:

* 2-on-1 counts as 2 separate duels
* If one person escapes from 2 people, it's a draw (Grievous vs Anakin/Obi-Wan)
* In a 1-on-1 duel where 1 runs off, it's a draw if the person who flees did so of their own choice (e.g. Qui-Gon/Maul's first battle, Yoda/Dooku). It's a victory if they were forced to flee just to survive (Yoda and Sidious).

I understand what you are getting at but I just can't view what Anakin did as being anything like a duel. Mace was dueling. Sidious was dueling. Anakin intervened (breaking definition number 1) and attacked his ally. Its betrayal, its an attack, but I just don't see it as a duel.

Those two are disputable. As stated by others, Anakin chopping off Mace's hand as an act of betrayal shouldn't really count as a duel.
And there is actually a pretty decent theory that Palpatine threw the battle against Mace. According to the RotS book (which is EU canon), Mace and Palpatine were exactly evenly matched in lightsaber combat.

Evenly matched dosen't mean that a duel goes on forever. It means they have about an equal chance of winning.
