I always really liked the Sandtrooper on Dewback. I know he's not as "Fanboy KEWL" as all the Fetts (many of whom have great sculpts--don't get me wrong), but I thought Dewback was a really well done mini. Honestly, just running through the images on Mini Manager, I'd forgotten how good so many of the Rebel Storm sculpts were. Obviously, they got first crack at some of the classic outfits and poses (see Leia Senator or Lando). I would love it if the V-Sets allowed some of those great-looking older minis to find their way back onto the board in competitive games.
Oh, the AT-AT and Rancor are both on display in my apartment, so I obviously like those sculpts as well.

Jango BH is definitely a work of art, but I agree with buttcabbge on the Dewback and RS minis in general, as well as the Rancor. Each of the sets up though Universe had many great sculpts and paint jobs in them.

Best sculpt for me would be the human force adept. Just kidding. My personal faves are the Rancor and Felcor.

I remember my friends Nihilus had a red shodowing/lighting on the mini's robes from the lightsaber. Thought it was an amazing effect for such a simple technique.
I said my favorite sculpt was r2 and 3p0 from AE. I know its simple sculpt, but i felt like it really captured the characters and the film.
The baskalisk droid is pretty neat looking too.

My personal favorite has remained the Wampa from Rebel Storm. I think Jango, BH would make almost everyone's top ten overall though.

I'd say one of the absolute best sculpts is C-3PO Ewok Diety - 3PO's gotta have something going for "it".
