During a recent arena battle Epic Mace got a critical hit off on Epic Bane and defeated him. The guy controlling Bane got his Djem So save and counter attacked. This hit then killed Mace. Bane then did avoid defeat, he missed a save and spent a force point to reroll. Can Mace use force absorb to stop that action? Also, was that total sequence performed correctly?

No. You would fully resolve Bane's attack (which defeats Mace Windu and he is removed from the game), before you finish resolving the attack Mace made, which would then defeat Bane, and he could reroll his Avoid Defeat without fear of Force Absorb, because Mace had been removed and no longer able to further affect the game.

The Resolving Effects section of the FAQ spells this out.
