Let’s say you move one of your characters adjacent to an enemy character with Strafe Attack. When your opponent activates this character and uses Strafe, does your character get an Attack of Opportunity as it moves out of the adjacent square? Or is it assumed to always be in flight, meaning AoO is never possible? (And if that is so, can a character with Flight end its turn on a pit square?)

Flight and other such passive abilities are not optional and are always on.
A character with Flight will ignore enemies and thus not provoke AoOs, unless the other character has an ability that lets them do so (e.g. Jedi Reflexes).
Characters cannot end their move on a pit square. This is covered under Pits in the Rulebook.
