How does this rule apply when attacked on someone else's turn? Can I a re-roll a save once when I am attacked by a first enemy and again if I am attacked by a different enemy in the same player's turn?

It's per character turn. So you can block when Luke attacks, then again when Apprentice Redeemed attacks, etc.

What most people actually call a "turn", is in a phase in game terms. The individual character activations is the actual turns gamewise. So like urbanjedi said, if you are attacked by two different characters during the opponent's phase, you could use force to reroll/use force powers in each of the two turns.

A phase (when a player goes) usually consists of two activations (where two pieces are used). An activation usually consists of one turn (one piece does something). However, what about Pawn of the Dark Side or Dominate? In that case, there are two turns in the same activation.
Suppose Darth Sidious moves away from an adjacent enemy - say a Jensaarai Defender. The Jensaarai re-rolls a missed attack of opportunity. Then Sidious uses Pawn of the Dark Side. Someone else attacks the Jensaarai - can they use Lightsaber Deflect? It's still Sidious' turn and they spent a force point once already, but it's also someone else's turn (the Pawn) and the Jensaarai hasn't used a force point on the pawn's turn. I would guess yes, but this is the first I've really thought about it.

Pawn of the dark side specifically creates another turn so you could. However, if you used something like Princess Leia CE to give someone a free attack at the end of her turn, then no you couldn't.
So Sid moves away and you use a FP to re-roll because you missed. Then he pawns a guy and you want to use LS Deflect. That is perfectly fine.
Princess Leia Shoots you and you use LS Deflect. Then Leia gives Han a free shot at the end of her turn. You could NOT use LS deflect on Han's shot as it is still during Leia's turn.

Thanks. I knew it created another turn. I just didn't know if a player would be restricted by the fact that Sidious' turn was still ongoing. I guess maybe his turn is suspended while the new turn is taking place. (?) In any case, it makes sense that you could spend force points on the newly generated turn.
