Ok, so I know that if a character with stealth has cover they do not count as the nearest enemy if they are 6 spaces away and so they cannot be attacked (normally). However what if the character with stealth is the only character in line of sight. Can it be attacked because there are no other targets or can it not be attacked? Thanks in advance.

No, because they still don't count as the nearest enemy, even if they are the only one.
