It reads 'Cannot be targeted by non-adjacent enemies'. So what happens to someone behind it?

1. Can they be targeted at all? (I would assume so)
2. Do they have cover?

Also, I never really understood if you can target someone with cover even if they aren't the nearest with something like Grenades (though I assumed you cannot), and that would kinda apply to this chameleon as well (can you target someone right behind it, thus effecting it too, or would it give them cover making them also not count as nearest target).

On a side note, does Melee Reach effect attacks of opportunity? Can you AoO someone who moves out of a square 2 squares away with MR2/3, or do they still have to be adjacent?

Yes, as Invisible characters don't count as the nearest enemy.

Grenades follows all standard targeting rules, so a person in cover can only be targeted if they are the nearest enemy.

Invisible characters do not count as the nearest enemy, so the next nearest would be considered the nearest.

Melee Reach is only in effect when a character is attacking on their own turn, so it can never be used with attacks of opportunity.
