Now I'm assuming as these both happen at the start of the Skirmish I get to pick what order they resolve in. (If that isn't true this is probably irrelevant)

If I use Master Yoda's Jedi Trainer to give Ataru Style to Han Solo, Rebel General, and then if I use Versatility, is Ataru Style an SA I can now pick to give to his replacement piece? (I'm assuming the new piece does NOT get the extra Force Point.)

No. Once a character is replaced, they lose everything that is not on their card. So you can only get an SA that is on the card, not anything they may gain from Camaderie, CE's, or other effects.
