Ive always wondered why Cade Skywalker (Grown up version) has a lightsaber but he has no melee options? it confuses me when i try to use block or riposte then realize hes ranged. anyone bothered by that or is it just me?

the same reason that Luke, Legacy of the Light Side, has a lightsaber and NO gun, but is still ranged.

Having a Lightsaber does matter sometimes even if he doesn't have any direct abilities with it. From the WotC stuff mostly getting around a few different Damage Reducers, and with the V-sets it is important!

I'm still hoping for an Adult NR Cade that actually mainly uses a Lightsaber!

Because he has a lightsaber, his adjacent attacks count as an attack with a lightsaber, but does not count as a melee attack. (Yes, that's pretty dumb but dem's da rules.) Attacks with lightsabers ignore Damage Reduction and ignore Dark Armor. And it comes into play a couple other places, too.

Location: At the controls
Makes him a compelling choice to run with Anakin Solo, Galactic Hero.

Related question, would his ranged attacks count as being with a lightsaber too?

No, but Lightsaber Throw and Telekinetic Combat count as attacks with lightsabers. This comes from the Damage Reduction/Dark Armor glossary entries and the Telekinetic Combat glossary entry.
