If I am adjacent to a green square, but not on a green square and an enemy is adjacent to the same green square, but not on a green square do either of them have cover when shooting at each other from across the same green square? Basically, we are not adjacent to each other, just staring directly across the 1 green square that we both just happen to be adjacent to.

(I'm assuming you mean orthogonally adjacent. If diagonally adjacent to the low objects, you could get cover from other squares.)

Neither has cover from the other because you ignore low objects in adjacent squares for the purpose of determining cover.
