In a recent match, I dominated an opponent General Grievous: Scourge of the Jedi with Sly Moore. This particular Grievous has Cyborg (Counts as both a Droid and a non-Droid; living; subject to critical hits and commander effects). With twin attack and double attack I was able to do 40 damage to another opponent. Was this a legal move, as Sly Moore's dominate ability specifies that it is void against non-droid opponents? This appears to me that is can be ruled either way and is a grey area in this situation. In this instance, it was not game changing, but with 4 attacks, 11 attack, and Jedi Hunter, it could be. Is there a ruling on this?

You have to pay careful attention to the wording. It says "Target living character". Grievous is a cyborg, which counts as living. Since he is living, so he counts as a valid target. If it said, "not valid against Droids" or "void against non-droids", that would be different, but that isn't what it says.
Using Dominate is difficult. Dominate replaces turn. It's hard to get Sly Moore in place to use Dominate on an opponent effectively. It also follows the targeting rules, so Grievous would have had to have no cover or be the closest enemy to be the valid target.
Also, speaking of reading the words carefully. I just learned that Cyborg specifies living. I did not realize that. I thought Cyborgs counted as both living and non-living, but that is false. They count as droid and non-droid, but only count as living, not non-living.

Dominate came out before the Living wording was applied. Dominate applies to living characters, which a Cyborg is.
