I am just looking for some clarification, if an enemy hits one of my characters and I can 1. prevent the damage (via L Block/Deflect or Makashi/Soresu ect) and 2 Make an immediate attack (via Djem so, L Riposte, ect) can I do both? And if so is there any special order that I must do them in? (like must I Riposte first then try to Block?) Thank you

Negating damage does not negate the fact you were hit.
The order is presenting the resolving effects section of the FAQ.

Thank you! I also have another question: If you transfer damage via Bodyguard can the bodyguard try to Prevent the damage? I know he can reduce the damage but I'm not sure if they can use L Defense to prevent all the damage?

No. It's the same reason you can't Evade, say, damage from Lightsaber Reflect. Once you've transferred damage via Bodyguard, it's no longer damage from an attack, it's damage from a special ability.
