If I use a force point to move up to 8 squares and then attack a chameleon droid, can I then spend another force point to re-roll a failed save from the chameleon's mines 20?

Only if the character you are using has the ability to spend force points more than once per turn such as if they have Master of the Force 2 (or the much more rare MOTF3). Another example is with the Force Spirit 6 interactions.
