If a unit with vehicle has Slave Owner applied, then the unit is replaced via Vehicle's conditions, does the unit count as defeated for the SD20? This would be similar to the Exar Kun SD Ugnaught precedent, correct?

Additionally, does the new unit get the Slave Owner from the vehicle?

No to both.

It is replaced, not defeated, and no abilities transfer to the replacement, just the damage that is on it at the time.
