Wow, only one? K2SO gets my vote hehe. followed closely by chirrut "the force is with me" inwe. rounding it out is some non-unique aliens from Rogue One which we've never seen before; theres 50 odd at last count.

For flavor, we should have at least the 5 main Rebels
Jyn - Nothing really amazing that she does to warrant a great piece
Chirrut - Must have
Baze - Because he's awesome
K-2SO - I guess, but it only had 1 moment of action. Just another door opener with some form of shooting power ability
Cassian Andor - Maybe, kind of your basic troubled hero but I don't see anything that would make him great. Kind of like Finn in the Resistance set.
Then for flavor you would need Director Krennic and maybe a new Vader and and Krennics guards who were awesome.

I imagine you'll get most over the next 2-3 sets, but that depends on the designers (of which none have been chosen yet for vset 15+16).
Typical subsets these days are 6 pieces, and it's usually desirable to have muliple factions represented.
Main sets obviously can have more.

Not seen the film yet and unlikely going to be able to until it go's to streaming.
Having said that I don't see why a vset cannot be based solely on the film. I know all vsets try to have all factions in but as sets have been reduced to 40 + mini sets. I don't see why this needs to continue. Or how about the mini set be focused on the other factions. So a 40 set on Rogue one, and the mini set on other factions without a theme.
If this is not an option then all main character's from rogue one should be a priority.

There's a lot you can do with Rogue One, but a full set is pushing it. Mini set is not quite enough. Mini set + a few others sprinkled through the next couple sets would be where it's at IMO.
