Reading this ability, if taken for what it is actually saying, an opponent with non-melee Twin attack would not have an attack at all. If their attack is a Twin Attack, then losing it means they possess no attack whatsoever, correct?
Adaptive Shields (Enemies without Melee Attack lose Twin Attack while attacking this character or an adjacent ally)

No, that's not what it means. Twin attack is a special ability that allows a character to make an immediate extra attack as part of their attack phase. They would still have an attack phase, they just wouldn't be able to use the twin attack SA. Much like a character who has double attack on their card still gets to make an attack on their turn if they move, they just cannot use double unless the conditions of the SA double attack are met. Part of the conditions for the Double attack SA is that the character cannot move to use double, but they still get an attack phase if they do move just not double.

No they would just have a single attack.
Think of it like this
So and So cost 35
Unique Twin Attack Assassin Cunning Attack
Then if they "lose Twin"
So and So cost 35
Unique
Assassin Cunning Attack
