Regarding the miniatures assigned to V Set cards, how strict is it in tournament play that specific figs are used? For example, do I have to use the specific Mace Windu fig on Mace Windu, Legacy of the Light Side or can any Mace Windu fig be used? (General Windu is my favorite fig).
Also, regarding Reylo (Rey and Kylo, Force Bonded Allies) do you have to have Jacen and Jaina or will any large base fig do?
I.E. is the picture on the V Set card more a guideline than an actual rule?

Use whatever you prefer, for the most part. As long as it's clear which piece is which, you're good to go. Sometimes (on the rare instances when I still get to play in-person) I put a small sticker on the base with the Name printed on it.
Re: Reylo: any large base will work. The pics on the cards are more guidelines than anything.
However, there are two specific things shown on the card image that definitely do matter: --Whether or not the image on the card has a lightsaber. Some images are of a mini that has a lightsaber, but the lightsaber is removed on the card...that character does NOT have a lightsaber in play. --The size of the miniature (especially remember the difference between Small and Medium).

We've seen Teddy Grahams serve as proxies for ewoks and a Venus flytrap a proxy for the Salacc.
