Force Cancel, Force Defense, if Nomi uses cancel on say, General Windu, is he able to Force absorb the ability? or does it simultaneously cancel his force so he cannot use the ability

do you mean sever force?
if you meant sever than yes he can. It is in reaction to the force power being used. It therefor takes place before sever can take effect.

little tip, if you have the exile within 6 of windu then you can force Defense his force absorb making server force work.
