I'm confused. What exactly can you do on surprise move? Can you move up to 6 squares, can you move up to 6 squares and attack, or can you just take a normal turn without doing anything that replaces attacks or replaces turn?

Surprise Move allows you to move your normal speed, which is normally Speed 6. You cannot attack or anything, but you still take AoOs by moving.
The glossary definition actually describes this: "(Force; 1 Force point) After initiative is determined, a character can immediately use this Force power to move up to its speed before any other character activates. (This does not count as an activation.) This character can use this Force power only once per round. If multiple characters have Intuition or Surprise Move, resolve these abilities and Force powers in initiative order. "

So could you move 6 squares or 12 squares. The exact definition of speed is confusing me.

Speed for characters is 6 unless noted otherwise or modified. "Double speed" is 12 for these characters.
Intuition is at speed. Attacks or abilities that replace attacks can only occur at speed or less number of squares.
If a character moves more than speed, it cannot attack or replace attacks (grenades, satchel charge) unless they have a specific ability to ignore this rule.
