Can Lightsaber throw be evaded?
Also, if GMY has 1 target within 6 and he is adjacent to another enemy 7 squares from yoda, does he twin them both?

Lightsaber Throw is counted as a non-melee attack and is thus subject to Evade when applicable.
Yes, it does not matter where the target(s) are, only that Yoda has a single enemy within 6.

It all depends on where the target is. If the user of Lightsaber Throw attacks someone non-adjacent, it is still a non-adjacent attack, thus Evade works per the defination.
