So if I am reading this right any of the poison's are + whatever damage if the regular attack hits. So even if you parry, ssm, lightsaber block.... you were still hit by the attack so you would need to make a save for the poison?

You would still need to make the save for poison even if a block/parry/etc. was successful. However, the end result would still be the same.
Most people choose to resolve poison first as then they know how much damage they'd be trying to save against, making it a better tactical decision for a force point reroll or an optional ability.

To make this clearer: If an attack is blocked/parried/etc. because poison is a bonus it is also stopped, but technically you still have to roll the save.

Does granting Nom Poison +10 (via Carr) give him a bonus on ranged attacks? Poison does not say adjacent, so I am guessing, yes.

I can not find anything that says it would not count. My personal ruling would be that the +10 poison is aplied to ranged attacks as well. Kind of like a poison dart. :-P

Nothing in Poison's description says it only applies to Melee Attacks.

I wondered this, too. It's kinda weird because the only characters who have Poison printed on their card have Melee Attack, so one would think it only applies to melee attacks. However, you and Sithborg are correct; Poison is not restricted to melee attacks, so it does apply to any attack.

since the glossary definition of Poison says "+10 damage when this character hits an enemy" that means poison works only on attacks and not special abilities, right?

Yes, however, any bonus that is a bonus to a stat, like Atk or Dam, can only be used when that stat is used, which currently is only in attacks. Cunning, Deceptive, and the like do not affect non-attack Special Abilities.

Poisoned projectiles are fun.
